Λαχανικά, χόρτα και όσπρια (Lachinika, chora kai ospria) are the vegetables, greens and pulses that, along with olive oil, are key to the famous Mediterranean diet that was the result of a post war study that began when it was noticed that the Cretans, in spite of the deprivations they had suffered, were extremely healthy, suffering very low incidents of cardio-vascular disease and cancer.
