Stuffed vegetables, usually tomatoes, green or yellow peppers, zucchini, and sometimes onions are classics of Greek cooking and mainstay of the old fashioned steam table.
The stuffing is nearly always mix of rice, parsley, onion, garlic, tomato pulp, chopped courgette, mint and dill, with generous lashings of olive oil. It's a good vegan/Lenten dish, but there's also a version with ground meat and cinnamon.
