Ionian Islands
Τα Ιόνιανα νησιά (Ta Ioniana nisia), the Ionian islands of western Greece were never part of the Ottoman empire (although they were briefly part of the British one in the 19th century) so in many ways developed their own cuisine, often influenced by the Venetians who ruled them for centuries.
