A very sweet, rich almond-based sweet from Kýthera, an island known for its range of sugary goodies. Πάστα μύλου ('mill cake') has rich buttery crust topped with a filling of egg whites, fine semolina, sugar, blanched ground almonds and cream made with milk, sugar, eggs and semolina, and often topped with a vanilla glaze; some cooks use vanilla ypovrýchio.
Elsewhere, πάστα μήλου (pásta mýlou) is most likely to be apple cake, made with layers of thick apple sauce, cinnamon, vanilla cream and butter biscuits.
