A blend of a spices (cinnamon, cloves, spice, sweet paprika, hot pepper, black pepper, nutmeg and bay leaves) used since medieval times on Corfu to flavour numerous dishes.
The word derives from the Venetian word for the person who ground up ingredients in an apothecary; one pharmacy, Karamelas in Corfu Town, still makes it the old-fashioned way.
