préntza

πρέντζα

Préntza (or prénza) is leftover cheese made into a spread for bread on Kefaloniá and Zákynthos. When a barrel of feta cheese or cheese is emptied, all the crumbs are mixed with olive oil and thyme to make a creamy mixture.
