Θράκη (Thraki) or Thrace up in Greece's extreme northeast corner (now part of the region of Eastern Macedonia and Thrace) is only a small part of the territory of the ancient Thracians, which extended across much of modern southern Bulgaria and northwestern Turkey. A borderland, with an important Muslim minority, it's where many refugees from Turkey and the Pontus settled, who have contributed many culinary specialties, notably in the pastry department.
