Originally from the Molise. Made with a yeast-based pastry and baked in the oven, fiadone come in various shapes and sizes, round or half-moon shaped, with cheese (often goat cheese) inside, along with maybe sausage and tomato.
Some in the Molise, but especially in the Abruzzo, also make fiatoni dolci sweet versions, usually filled with ricotta. There are recipes here.
Also spelled fiatone, fiadoni dolci or fiatona; the small versions are called fiadonetti, and soffioni di ricotta abruzzesi.
In Corsica, a fiadone is a lemon-scented cheesecake.
