Semi-hard fresh handmade cow’s milk cheese from Tínos, briefly aged wrapped in gauze in little baskets then hung to age. It’s often flavoured with red peppercorns or poppyseed. It’s a very tasty table cheese, made by cheese-making master Angela Roungeri, and available in Tínos’s restaurants and shops.
Σκλαβοτύρι is another name.
