A buttery sheep and goat milk cheese from Sífnos that is ripened, then covered in wine sediments and stored in jars to mature, giving the cheese its unique spicy taste. The locals call it γλυκομένι μανούρα (glykoméni manoúra). Designated PDO (ΠΟΠ)
If eaten young and not soaked in lees it's a softer, milder cheese called χλοραμανούρα (chloromanoúra).
