Auvergne-style cheese cake

Una tarta flausona, tallada per a poder apreciar el seu interior

Also known as tarta flausona, this big time favourite in the Auvergne is made in a pâte brisée crust with sheep curds, eggs, flour, sugar and orange blossom water.

It’s similar to Alsace’s cheesecake, or flan pâtissier au fromage blanc (or gâteau au fromage or tarte au fromage).
