Also known as flan parisien, a flan pâtissier is a crust, often pâte sucrée, filled with egg custard and baked. Many bakeries sell it by the slice; schoolchildren often have it for their afternoon gouter.
Flamusse aux pommes is a flan made in Burgundy with apples, but without pastry. Fion is another, made in the Vendée.
