Anything flat, sweet or savoury, baked in a tart pan and nearly always with a crust.
One of the most beautiful is the tarte de soleil, a popular aperitif dish at parties, made with pâte feuilletée and a filling twisted into strips. Popular fillings include goat cheese, pesto, tapenade, sun-dried tomatoes, garlic butter. There are sweet ones as well — nutella is a favourite, especially at children’s parties.
Another classic is a tarte à l’oignon, made in a puff pastry crust with onions, eggs, and crème fraîche.
In the Hauts-de-France they make a dessert with beer, tarte à la biere in a pâte brisée, with beer, butter, eggs and sucre vergeoise, reminiscent of American shoo-fly pie.
