Jésuites are a popular pastry, made with pâte feuilletée, filled with frangipane and topped with slivered almonds. They are said to have been invented in Bordeaux.
Named after the Jesuit biretta, the pastry is always cut into isosceles triangles, which makes them vaguely resembles the order’s headwear.
