creamy goat's milk cheese

The Caseificio dell'Alta Langa makes this soft lightly pasteurized goat's milk cheese, named after the local breed of goat and usually sold in a little ruffled paper holder. It is aged for only ten days before hitting the market, and has a tangy, mushroomy taste and a soft edible rind.
