Walser onion and bacon soup

The valleys in northern Piedmont and Aosta around Monte Rosa are the home of the Walser, an ethnic minority who came from Wallis in the upper Rhône valley in the Middle Ages and still speak a German dialect.

Their wallishuppa is made with onions and bacon in beef broth; layers of rye bread and toma cheese are added and put under the grill to brown, before melted butter and cinnamon are added on top.
