Baci are little biscuits with a sweet 'kiss' or filling in the centre. There are many different kinds: baci di dama, a recipe that originated in Piedmont, feature biscuits made with ground hazelnuts, with a gianduia filling. Other recipes call for walnuts or almonds instead of hazelnuts, and chocolate, vanilla or other cream fillings; baci royale are covered with chocolate.
Baci di Alassio: soft hazelnut biscuits filled with chocolate ganache.
Baci di Cherasco: similar to 'chocolate turtles' are made with dark chocolate and toasted hazelnuts.
The Perugina company also makes round chocolates called Baci, filled with gianduia.
