Light, feathery, made with yeast, eggs, milk, sugar and butter, and covered with a glaze and powdered sugar, colombine are speciality of Carnia, in northeastern Friuli.
Colombine is also the word for russula mushrooms. Colombine maggiori is a russula cyanoxantha; the French call it a charbonnière (charcoal burner). Dull grey cap, pink underneath.
