Pasta sfoglia is the dough. The pies can be sweet or savoury; simple, flat versions may have only onions or anchovies inside. There are sfogliate with spinach, or vegetables and ricotta, mushrooms, potatoes, tuna, etc. Also many dessert versions with fruit.
Sfugliulata is a southern word for them.
In Finale Emilia, a simple sfogliata from the Jewish kitchen called torta degli ebrei is honoured with a festival every year on 8 December, the Sagra della Sfogliata.
