mountain ham

Similar to violino. A speciality of the western Alps, a salted ham flavoured with herbs and juniper that can be made from any animal. Originally game, such as chamois or ibex, was used. Now commercial production uses mostly beef.

Also spelled motsetta, motzetta or mocëtta. Designate PAT.
