They grow sweet white pumpkins on Mílos, and use them to make kouféto, a white spoon sweet made with honey, water, sugar, blanched almonds and lemon juice, sometimes flavored with cinnamon sticks.
It’s often served at weddings and engagements, and is sometimes known as the marriage sweet.
On Santoríni they make a marriage sweet, Κουφέτο Σαντορίνης with almonds, thyme honey and cognac.
