Butterflied and barbecued grey mullet (the abundant kéfalos from the Ambracian Gulf). In the old days the fish were split open, cleaned, salted, pounded and dried as a way of preserving them before refrigeration.
Properly κέφαλος πετάλι (kefalos petali).
