Grey flathead mullet (also known as κεφαλόπουλα, kefalópoula), usually baked with potatoes, or pan fried with lemon and thyme.
Grey mullets are raised in the lagoons of Greece, especially in the Ambracian Gulf, for their precious roe. After they are killed in August and their egg sac carefully extracted, they are known as μπάφα (báfa); Preveza's tavernas has several special recipes for them.
