Smoked cow's goat and/or sheep milk cheese, similar to Italian provolone, from the Vlach village of Métsovo, high in the Pindus mountains. Production started in 1958, when Métsovo's great benefactor, Evangelos Averof-Tositsas founded a model dairy there. Designated PDO (ΠΟΠ) since 1996.
