Lagána is Clean Monday flat bread with a crunchy top, often topped with sesame seeds, that closely resembles Italian focaccia. Originally made without yeast (although these days it usually is) the name comes from the ancient (λάγανον, laganon) a rolled out piece of dough or pastry, which most likely the origin of the word lasagna.
Some call it tracta, from the ancient Greek τρακτὸς.
