A saganáki is a small frying pan, but it's become synonymous with the famous fried cheese starter, made with a wide variety of Greek cheeses, and served hot with lemon. In Cyprus they nearly always use haloúmi.
Prawn saganaki (γαρίδες σαγανάκι, garídes saganáki) and mussel saganáki (μύδια σαγανάκι, mýdia saganáki) are also popular starters, made in a similar small pan, and cooked in a spicy tomato sauce. You might even see σαγανάκι λουκάνικο (saganaki loukaniko), with sausage.
