Decadent old Louis XV famously loved chocolate, and lent his name to this famous chocolate mousse cake that has become a signature dish of Alain Ducasse’s eponymous triple-star Michelin restaurant in Monte-Carlo.
The base is a dacquoise, while the chocolate mousse is made like a sabayon. On top, there’s a light crispy layer of feuilletine before a chocolate mirror glaze is poured over the pastry.
