Brittany was crushed when its beautiful 17th-century Parliament building (funded by a tax on cider) burned in 1994. When it was restored and reopened five years later, the Fédération des pâtissiers d'Ille-et-Vilaine, created the Parlementin in its honour.
It’s a soft almond biscuit, combined with candied Reinette d'Armorique apples with cider, topped by a nougatine tuile.
