nid d’hirondelle

veal birds

Nid d'hirondelle au saumon et au jambon, écrasé de pommes de terre et jus de viande au romarin

Nid d’hirondelle is literally a swallow’s nest, and if you see it on a menu in a Chinese restaurant that might be what you get.

In a French restaurant, it’s a veal scallop and ham rolled around a hard boiled egg and cooked in a tomato sauce with mushrooms; many variations can be found.
