Soft fresh white sarasson (or sarassou) is made from babeurre (buttermilk) and resembles whipped fromage frais. The milk used can be cow or goat and is beaten with salt and pepper; sometimes herbs or shallots are added, along with crème fraîche or vinegar.
It’s often served on boiled potatoes, or with crudités. Some mix it with sugar.
