Invented in France in the early 20th century, crispy palmiers are made with puff pastry (without the yeast), coated with sugar, and curled to resemble the top of a palm tree (although others think they look like hearts, or elephant ears, or pig’s ears), then baked until crispy.
Some are partly coated in dark chocolate or incorporate apricot jam, which makes them even stickier
