Oran, Algeria was a centre of apricot production. In the 19th century, French colonists introduced crème pâtissière, and the pastry that resulted is the oranais.
Also known as apricot glasses (lunette aux abricots), or croissant aux abricots, or abricotine, it’s made with puff pastry, crème pâtissière, and apricot halves, then sprinkled with sugar.
