meunière

brown butter, lemon juice and parsley

Lenguado a la meunière con velo de leche, alcaparras y crujiente de la piel

Meunière means ‘in the style of the miller’s wife’: first dredged in flour (a miller’s wife would have had that on hand), then served with a sauce of lightly browned butter, lemon juice and parsley; sole meunière (the dish that converted Julia Child to French food) and truite meunière are classics.
