Truite brun or truite fario is brown trout; truite arc-en-ciel or truite saumonée is rainbow trout.
Classic French trout recipes are truite aux amandes (with almonds) truite meunière (with butter and parsley), truite grenobloise (with onions and capers).
In the Pyrenees (a good place to find freshly caught river trout) look for truite au Jurançon baked with mushrooms and crème fraîche and Jurançon wine.
