Any lamb over a year old is a mouton in France. Don’t expect to see it in a supermarché or restaurant, but you can find dishes that use it such as baron de mouton— a rack of lamb (or mutton) with two gigots and mouton en pistache.
A gasconnade, among other things, is a baron de mouton baked with anchovies and garlic and wine.
