Chevreau or kid isn’t very popular in France (the French find it insipid and much prefer lamb agneau), but some people in the Pyrenees, southeast France and Corsica eat it instead of lamb at Easter.
To be a chevreau, the kid is exclusively milk fed and slaughtered at less than three months; if it’s older, it’s called cabri and almost impossible to find outside of Corsica.
