Invented 50 years ago in Montauban’s Maison Mauranes, the mountalbane is a rich buttery cake flavoured with orange flower water, vanilla and rum, and shot through with candied fruits and presented in a pretty white paper wrapper.
Its name comes from Montauban’s original name, Mons Albanus (‘white hill’), derived from the silvery willows that once grew there.
