A tasty white sea fish, merlan (whiting) is related to the cod and haddock, and commonly seen in French fish stands. It has firm white flesh, but its fillets fall apart easily and need to be cooked carefully.
Merlan en colère ‘angry whiting’ is a Provençal dish: the fish is formed into a crown shape as if biting its own tail, then fried, and served with a sauce of fresh tomatoes and fried parsley.
Faire des yeux de merlan frit ‘to make the eyes of a fried whiting’ means to make goo-goo eyes at someone.
