Green asparagus

The French love asparagus, both the green and white kind, especially in the spring when it’s one of the first homegrown vegetables to appear, along with spinach. In winter you can also find green asparagus imported from South America. White asparagus (asperges blanches) in jars is always available and often finds it way into a salad.

In spring you can also find wild asparagus (asperges sauvages or asperges sylvestres) if you know where to look, or at a specialist greengrocers.

Useful expression

Grande asperge ‘big asparagus’ is used for someone tall.
