Also known as la Cerianasca or sousisa de Seriana, this sausage is made according to a centuries' old secret recipe with pork, pancetta, herbs and white pepper in the old hill town of Ceriana, where the third weekend in August sees the Sagra della Sousissa Serianasca. It is often grilled, or cooked with red wine, or served with taggiasche olives.
