Austrian-stye 'royal meat' made from the eye of the pork loin is still popular around the charming border city of Gorizia, once the 'Nice of the Austro-Hungarian Empire'. The pork is marinated, smoked and boiled usually served with sauerkraut and horseradish. It can also be smoked pork loin served cold and thinly sliced.
