Like the French velouté—a soup that's blended completely smooth. Vellutata di patate e porri is leek and potato soup, vichyssoise. Italians like them made of carrots, leeks, peas, pumpkin, mushrooms, lentils, asparagus, potatoes or just about any vegetable.
Vellutata can also mean a smooth or white sauce that accompanies a dish.
