Not 'stuffed', as many assume. Most Italian stews are are rather simple, with few ingredients:
stufato alla sangiovannese: veal shank with red wine, nutmeg, lemon peel
stufato alla fiamminga: 'Flemish' stew, really a pot roast: beef cooked in beer
stufato alla fiorentina: beef stewed with red wine, garlic and rosemary.
Many stufati are foreign recipes, and many go under other names such as spezzatino or stracotto.
