black salsify

Aka scorzonera hispanica and not as common in Italy at its in France. The name comes from the Old French word for viper, scorzon because it was believed to be a cure for poison snake bites. Also known as the black oyster plant, serpent root, viper's herb or viper's grass.

White salsify (Tragopogon porrifolius also known as purple or common salsify, oyster plant—for its edible oyster flavoured root—or vegetable oyster, or Jerusalem star) is called salsefrica or scorzobianco or barbabuc in Piedmont, where it is cultivated
