A home-made Tuscan spaghetti that can be a version of spaghetti alla chitarra, or rolled or cut by hand. Some common sauces to go with pici are aglione (tomato with lots of garlic), alle briciole (breadcrumbs, garlic and chili flakes), cacio e pepe; porcini mushrooms (boscaiola), wild boar, duck or hare sauces are also popular in season.
