A cheese from the Asiago high plateau north of Vicenza, and in particular from Lusiana, this soft cheese is made from pasteurized whole goat's milk; because it has a short shelf life it's hardly seen outside of Italy. It comes in squat cones or rolls and has a light sour flavour; sometimes it has added thyme, chives, or cumin. Also known as Fior di Capra.
