Also known as graffioni di Cremona for the town most famous for them, or graffoni fondente, these are dark chocolates, with a moretta di Vignola cherry and cherry liqueur inside. The best ones are handmade in pasticcerie (some also make white and milk chocolate versions). Smooth ones, generally industrially made, are called boeri.
The name comes from the chocolate's irregular shape and uneven, 'scratched' (graffiata) surface.
