The Sauternes of the Veneto, golden Torcolato DOC is a passito wine made only in Breganze, in the province of Vicenza, from handpicked Vespaiola grapes that have been lightly affected by noble rot. The grapes are wound in bunches around twine and hung from the ceiling to dry for four months in a twisted rope. These hanging clusters form twisted ('torcolato') ropes that give the wine its name. The wine is aged for at least ayear; a Riserva label is aged for at least two years.
