Perca fluviatilis A speciality of the Italian Lakes, also many rivers. One of the tastiest freshwater fish; there are many ways of cooking it, from simple frying to putting it in ravioli with prawns.
Also called pesce persico, perca, persico reale, péss pèrsech.
