ncarteddrate

honey-covered fritters

In southern Puglia, ncarteddrate (or cartellate, carteddate, or carthedhathe) are a Christmas treat: elaborate, delicate ribbons of dough made with orange zest and white wine, formed into the shapes of flowers or baskets, fried and covered with honey or vin cotto, pine nuts and chocolate.

The same dough is used to make purcheddhuzzi.
